Beet Greens

Ever wonder what to do with tops of your beets?  Instead of throwing the greens away, try this recipe with a little Southern twang!


1 lb. beet greens

1 strip of thick cut bacon, chopped (or a tbsp. of bacon fat)

1/4 cup chopped onion

1 garlic clove, minced

3/4 cup water

1 tbsp granulated sugar

1/6 cup apple cider vinegar

1. Wash the greens in a sink filled with cold water. Drain greens and wash a second time.

2. Drain greens and cut away stems. Cut leaves into bite-sized pieces. Set aside.

Bite-sized greens ready for cooking!

3. In a large skillet, cook bacon until lightly browned on medium heat.

You can NEVER have too much bacon.

4. Set cooked bacon aside…

… but keep the bacon grease in the pan!

The rest of your ingredients

5. Add onions to the bacon fat and cook over medium heat for 5 – 7 minutes, stirring occasionally until onions soften and start to brown.

6. Stir in the garlic…

… add water to the onions and garlic in the hot pan and stir.7. Stir in the sugar and bring mixture to a boil.

8. Add beet greens.

9. Toss greens until well coated in mixture. Reduce heat to low, cover and simmer for 5 – 15 minutes until greens are tender.

10. Stir in the apple cider vinegar.

Serves four
